French-style bistro dining can now be enjoyed in the Colombian cities of Bogotá and Villavicencio, thanks to the Rausch brothers. Located in the chic Bogotá neighborhood of Usaquén, with a traditionally rustic design, this restaurant combines the very best of European and American cuisine. Diners can order from a wide-ranging menu, with particularly popular dishes including the chorizo meatballs, black fettuccine with shrimp in a white wine sauce, macaroni in salsa rosa, meltingly soft veal braised in beer known as las carbonadas a la flamenca, popcorn panna cotta and their signature chocolate mousse.

Marea is located right at the heart of the historic center of Cartagena de Indias. The restaurant was the Rausch brothers’ first foray into the Colombian coast and they bagged the best views in the city, with panoramas across the bay and taking in landmarks of the Old Town, such as the iconic Clock Tower.

El Gobernador

The Rausch brothers added to their Cartagena portfolio with El Gobernador, which offers signature cuisine with a Colombian twist within the Bastion Luxury Hotel. Gastronomic highlights include grilled octopus, their tender braised beef in a sticky sweet sauce – the Rausch take on the famous Posta Negra Cartagenera, lionfish with a tart green mango biche relish and – not to be missed – their coco loco ‘crazy coconut’ dessert.

Bastion Luxury Hotel opened the Bastión Bistro – another Rausch brothers initiative – within the newly renovated Serrezuela Plaza. Located within the Tentadero (“Tempting”) food court, the restaurant offers up a menu of different meat, fish and seafood dishes that include pastas, sandwiches and desserts. They are joined within the plaza by just ten other top dining establishments from Colombia’s leading chefs.

The Rausch brothers arrived in Pereira in partnership with Sonesta. Theirs is the first rotating restaurant in the city, which provides spectacular views of Colombia’s Coffee Region. Décor is inspired by the country’s pre-Columbian roots, together with wider cultural influences from the region, and the menu is set to impress with dishes such as chorizo meatballs, dates wrapped in bacon, shrimp in a coconut and saffron sauce and the traditionally Colombian meltingly soft, braised beef in a sticky sweet sauce, known as Posta Negra Cartagenera.
